Broccoli Parmesan Patties
Very tasty patties that require few ingredients and little time, perfect for any occasion. Served with mashed potatoes and a bowl of salad, they can be a standalone dish. Accompanied by a yogurt herb sauce, they become a light vegetable meal, ideal for lunch, dinner, or a snack.

1 piece Broccoli, fresh

1 piece Egg, fresh

70 g Wheat flour, white, multi-purpose

30 g Cheese, Parmesan, grated

1 pod Garlic, fresh

Steps

Cut the florets from the broccoli stalk, rinse them under running water, and dry them. Halve or quarter larger florets, leaving smaller ones whole. Place the broccoli in cold salted water, bring to a boil, and let it simmer lightly for 2 to 3 minutes. When half-cooked, drain, rinse with cold water, and drain again.

Peel and finely chop the garlic. In a large bowl, crack an egg and whisk it well with a hand whisk. Add flour, Parmesan, garlic, salt, and pepper. Mix the ingredients to form a uniform mixture, then gently fold in the broccoli, which has been finely chopped as desired.

Heat two to three tablespoons of oil in a pan. When the fat is hot, spoon the prepared mixture into the pan. For each patty, use about two tablespoons of the mixture, and flatten the mounds slightly with the back of the spoon to form 5 cm wide, slightly thick patties. When golden brown on the bottom, flip them with a spatula and cook the other side.

Place the cooked patties on a plate lined with paper towels. Repeat the process until all the mixture is used. Serve the patties while still warm, ideally with a yogurt herb sauce.
