Broccoli Quiche Without Crust

2 spoons Butter, unsalted

300 g Broccoli, fresh

6 pieces Egg, fresh

200 ml Sweet cream

140 g Cheese, groats
Steps

Preheat the oven to 180 degrees Celsius. Grease a round pie dish (23 cm in diameter) with butter. You can also use a rectangular baking dish.

Wash the broccoli florets and drain them. Peel and finely chop the shallot.

Melt butter in a pan and sauté the chopped shallot until translucent. Add the broccoli florets and season with 1/4 teaspoon of salt. Pour in about 80 ml of water and cook the broccoli until it softens but remains firm to the bite (approximately 3 to 4 minutes). All the water in the pan should evaporate. Remove the cooked broccoli from the heat.

In a bowl, whisk the eggs and mix them with cream and nutmeg. Season the mixture with salt and pepper to taste.

Transfer the broccoli and shallot to the greased baking dish and spread the vegetables evenly across the surface. Sprinkle grated cheese on top, then pour the egg mixture over everything. Place the dish in the preheated oven for 40 to 50 minutes.

The quiche is done when the top turns golden brown and sets. Let it rest in the dish for 10 minutes before serving.
