Brownie with Cream Filling and Cherries

Steps

First, prepare the chocolate mixture. Chop the chocolate and butter into pieces. Add them to a heatproof bowl along with a pinch of salt and melt over a water bath. Once the butter and chocolate have melted, gently stir until you have a completely smooth chocolate mixture. Set aside and let it cool to lukewarm.

Crack the eggs into a bowl. Whisk them together with sugar until frothy. First, mix the melted chocolate into the beaten eggs, then add the flour, which has been mixed with baking powder and sifted. The resulting batter will be quite thick.

Next, prepare the filling. In a bowl, smoothly mix the cream cheese, sour cream, regular and vanilla sugar, and the egg.

Then prepare the cherries. In 50 ml of cherry compote juice, smoothly mix the cornstarch. In a saucepan, place the drained cherries, add sugar, and the remaining 50 ml of cherry compote juice. Slowly heat until all the sugar dissolves and the juice comes to a boil, then add the cornstarch dissolved in the juice. Cook over low heat while stirring until the mixture thickens.

Line a smaller baking pan (33 x 25 cm) with parchment paper. Pour in 2/3 of the chocolate mixture and spread it evenly over the entire surface. Spread the cream filling evenly over the chocolate mixture. Add the cherries on top of the filling and gently mix them in some places with the cream filling using a fork. Dollop the remaining chocolate batter on top, then sprinkle the pastry with chopped chocolate pieces.

Place the pan in the oven preheated to 180°C (350°F) for 35-45 minutes.

The baked pastry will be very juicy and soft, so let it cool before cutting into pieces.

Advice
Instead of cherries from compote, you can also use raspberries, strawberries, cherries, or frozen cherries. In this case, replace the compote juice with water.
