Brownies with Brazil Nuts
For an extra chocolatey flavor, dark and milk chocolate along with cocoa powder are used.

100 g chocolate, dark

115 g Butter, unsalted

Preheat the oven to 180 degrees Celsius. Line a deep square baking dish (20 x 20 cm) with baking paper (or grease well with butter). Cut both types of chocolate into small pieces. Cut the butter into cubes. Roughly chop the Brazil nuts.

Place a smaller pot on the stove and fill it with water up to 1/3. Place a heatproof bowl on top, making sure the bottom of the bowl does not touch the water in the pot. Add the dark chocolate, 25 g of milk chocolate, and butter to the bowl. Slowly melt the ingredients in the bowl over the water bath. Once the butter and chocolate have melted, mix them well and remove the bowl from the heat.

In a bowl, use an electric mixer to whisk the eggs until frothy. Beat them at medium speed for about 30 seconds. Gradually (by spoonfuls) add the sugar and continue beating at high speed for about 4 minutes, until the mixture thickens.

Reduce the mixer speed and mix the melted chocolate into the egg mixture. Sift the flour and cocoa powder over the chocolate mixture and mix everything well at low speed to form a smooth batter without lumps. Finally, fold in the Brazil nuts and 60 g of milk chocolate with a spatula or spoon.

Spread the batter evenly in the baking dish with a spatula or spoon and smooth the top. Bake the batter in the preheated oven for 25 to 30 minutes, or until the edges start to pull away from the dish and the center feels firm to the touch.

Remove the baking dish from the oven, place it on a rack, and let the brownies cool completely. Once cooled, cut the brownies into squares of any size, serve on plates, and enjoy.

Advice
Instead of Brazil nuts, you can use hazelnuts, almonds, or walnuts. A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place the heatproof container with ingredients on top of another container with hot water. The water in the lower container should not boil vigorously!
