200 g chocolate, dark

110 g Butter, unsalted

Steps

Preheat the oven to 175 °C. Grease a 20 x 20 cm baking dish and lightly dust it with flour. In a medium-sized bowl, mix the flour, salt, cocoa, chili, and cinnamon.

Place a saucepan filled one-third with water on the stove and place a metal bowl on top. The bottom of the bowl should not touch the water! Chop the chocolate and butter into pieces and place them in the metal bowl. Heat and stir over the water bath for about 6 minutes until the butter and chocolate are completely melted and combined into a smooth liquid mixture. Remove the saucepan from the heat and let the mixture cool slightly.

In a bowl, using an electric mixer, beat the eggs and sugar until frothy. Reduce the speed and slowly mix in the cooled melted chocolate, vanilla, and ginger. Finally, gradually fold in the flour with a hand whisk.

Pour the batter into the prepared baking dish. Smooth the surface with a spatula. Bake the brownies in the preheated oven for 18 to 20 minutes. Properly baked brownies should still be quite soft and moist. Remove the baking dish from the oven and let it cool.

Once cooled, cut the brownies into pieces of your desired size, place them on plates, and serve.
