Steps

Preheat the oven to 180 degrees Celsius. Grease a baking dish and line it with parchment paper, so that the paper hangs over the sides. Finely chop or grate the chocolate. Cut the cookies into quarters (it's okay if they crumble).

Melt the butter over medium heat. Once melted, remove it from the heat and add the grated chocolate. Let it sit for a few minutes, and when the chocolate becomes soft, mix it well with a spatula.

Whisk the eggs, egg yolks, and vanilla seeds until light and frothy. Add the sugar in two parts (add it from the side so that not all the air escapes from the egg mixture). Then add the chocolate, again from the side.

Mix the flour, cocoa, salt, and one-third of the cookies together and fold them into the egg-chocolate mixture. Pour the batter into the baking dish and sprinkle the remaining cookies on top, pressing them lightly into the batter. Bake the brownies in the preheated oven for 25-30 minutes. The inside of the cake should still be very soft.

Once the brownies are baked, let them cool in the baking dish. The surface of the cake will be slightly cracked, but that's okay. Cut the brownies, dust them with powdered sugar, and serve.
