Ingredients
-
300 g chocolate, dark
-
180 g Butter, unsalted
-
120 g Sugar, brown
-
4 pieces Egg, fresh
-
115 g Wheat flour, white, multi-purpose
-
115 g Nuts, almonds
-
0.25 teaspoons Salt, table
-
1 teaspoon Baking powder
-
80 g Pistachio
-
60 g Pine nuts
-
0.5 spoons Butter, unsalted
Steps
-
Preheat the oven to 160 degrees Celsius. Grease a smaller deep baking dish (approximately 23 x 23 cm) well with butter (or line it with baking paper). Break (or cut) the chocolate into smaller pieces. Also cut the butter into smaller pieces. Coarsely chop the pistachios. In a bowl, mix the ground almonds, flour, baking powder, and salt.
-
Place a smaller pot on the stove and fill it with water up to 1/3. Place a heatproof bowl on top, making sure the bottom of the bowl does not touch the water in the pot. Add the pieces of butter and chocolate to the bowl, then melt them over the water bath. Once the butter and chocolate have melted, mix them well, remove the bowl from the heat, and stir in the brown sugar into the chocolate-butter mixture.
-
In a bowl, beat the eggs with an electric mixer until frothy. Slowly mix the chocolate-butter mixture into the beaten eggs. Then gradually mix in the flour, almond, and baking powder mixture. Finally, fold in the pistachios and pine nuts.
-
Pour the prepared mixture into the baking dish and bake in the preheated oven for 20 to 30 minutes. The brownies are done when the center of the dish feels firm to the touch.
-
Once the brownies have cooled, cut them into larger cubes, arrange them on a platter, and serve.

Advice
Brownies can be served with whipped cream. A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with the ingredients over another bowl with hot water and whisk the ingredients in the upper bowl until they thicken and froth. The water in the lower bowl should not boil vigorously!
