Brownies with Walnuts

Its true that a scoop of good ice cream goes perfectly with them… Do you need any more reasons to try brownies at least once?!

Ingredients

250 g chocolate, dark

250 g Butter, unsalted

1 pinch Salt, table

4 pieces Egg, fresh

150 g Powdered sugar

200 g Wheat flour, white, multi-purpose

Steps

Preheat the oven to 180 degrees Celsius. Line a small rectangular or square baking dish with parchment paper (or grease it well with butter). Chop or break the chocolate into smaller pieces. Cut the butter into cubes. Save some walnut halves for decoration and roughly chop the rest.

Place a smaller pot on the stove and fill it with water up to 1/3. Place a heatproof bowl on top and make sure the bottom of the bowl does not touch the water in the pot. Add the dark chocolate, a pinch of salt, and the butter to the bowl. Slowly melt the ingredients in the bowl over the water bath. Once the butter and chocolate have melted, mix them well and remove the bowl from the heat.

In a bowl, use an electric mixer to whisk the eggs until frothy. Beat them on medium speed for about 30 seconds. Gradually (by tablespoons) add the sugar and continue beating on high speed for about 4 minutes, until the mixture thickens significantly.

Reduce the mixer speed and mix the cooled melted chocolate into the egg mixture. Sift the flour over the chocolate mixture and mix well on low speed to form a smooth batter without lumps. Finally, fold in the roughly chopped walnuts with a spatula or spoon.

Spread the batter evenly in the baking dish using a spatula or spoon and smooth the top. Bake in the preheated oven for 25 to 30 minutes, or until the edges start to pull away from the dish and the center feels firm to the touch. Remove the dish from the oven, place it on a rack, and let the brownies cool completely.

Finally, prepare the decoration. Cut the cooled brownies into equal-sized squares. Melt the chocolate over the water bath. Spread the melted chocolate on the bottom half of the walnut halves. Place the halves in the center of the squares. Wait until the chocolate cools and sets slightly, then serve the brownies on plates and enjoy.

Advice
If you want the center to be still gooey, bake the brownies for less than 25 minutes. A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (mainly for preparing various sauces and creams). Place the heatproof bowl with the ingredients on top of another bowl with hot water. The water in the lower bowl should not boil too vigorously!
