Buchteln with Plum Jam

Ingredients

150 g Marmalade, orange

500 g Wheat flour, white, multi-purpose

80 g Butter, unsalted

3 dl Milk, whole milk

50 g Sugar, white

2 piece Egg, fresh

0.5 cubes Yeast, dry

1 bag Powdered sugar

1 spoon Salt, table
Steps

Close the doors and windows to prevent drafts and warm up the room. Sift the flour into a large bowl. Make a well in the center and crack an egg into it, add sugar, a packet of vanilla sugar, and half a cube of yeast. Sprinkle the salt around the flour outside the well. Add 40g of butter to the well and pour in warm milk. Let it sit for five minutes to allow the yeast to rise.

Use an electric mixer with spiral hooks. Start mixing in the center of the well and gradually add lukewarm water or milk as the dough thickens, until all the flour is used. You should get a thick and smooth dough. Properly kneaded dough is elastic and does not stick to the bowl. Knead the dough and cover it with a cloth, then place it in a warm spot and let it rise for 30 minutes until it doubles in size.

Clean the counter and dust it with flour, turn the risen dough onto it and quickly knead it. Grease a baking dish with butter. Shape the dough into a roll and cut it into any number of pieces (depending on how large you want the buchteln to be). Flatten each piece slightly and place a spoonful of jam in the center. Bring the edges together and seal them, you can use water to help prevent the jam from leaking during baking. Arrange the buchteln in the baking dish in rows or shape them into a rose, lightly dust with flour and cover with a cloth. Let them rise for 20 minutes. Preheat the oven to 180 degrees Celsius.

Beat one egg and brush it over the risen buchteln. Place them in the preheated oven and bake for 30 minutes. Remove the baked buchteln from the oven and let them cool.

Advice
Buchteln are best when served warm. To help the dough rise, you can preheat the oven to 50 degrees Celsius and place the bowl with the dough inside.
