Buckwheat Cake

Ingredients
- 10 g Butter, unsalted

80 g Flour, buckwheat

120 g Wheat flour, white, multi-purpose

15 g Yeast, dry

1 pinch Sugar, white

1 pinch Salt, table

250 g Cheese, cottage cheese

2 piece Egg, fresh

2 bags Powdered sugar

2 spoons Sugar, brown

2 spoons Semolina

1 spoon Sour cream

In a pot, bring 3 dl of salted water to a boil. Sift the buckwheat flour into a bowl and pour the boiling water over it. Then transfer it to another bowl and let it cool. Prepare the yeast: in a small bowl, dissolve the yeast in 1.5 dl of lukewarm water (about 20°C) and add 2 g of sugar. Let it sit for 10 minutes to activate the yeast.

Add white flour, salt, and the yeast mixture to the cooled buckwheat mixture. Knead all the ingredients into a dough, continuing to knead until it becomes smooth and elastic and no longer sticks to your hands or the bowl. If the dough is too dry during kneading, add a little more water. Cover the dough with a cloth and let it rise in a warm place for 30 minutes.

While the dough is rising, prepare the filling. Crack the eggs into a bowl and whisk them until frothy using an electric mixer. Add vanilla sugar, brown sugar, and cream. Then add the cottage cheese and breadcrumbs, mixing everything well.

Grease a baking dish. Quickly knead the risen dough and roll it out on a floured surface to about 1 cm thick. Carefully place the dough into the baking dish. Press it against the edges so that the dough is evenly distributed along the sides. Gently pour the filling onto the dough and spread it evenly.

Preheat the oven to 200°C. Place the baking dish in the preheated oven and bake for 10 minutes. Then reduce the temperature to 180°C and bake for another 20 minutes, until the cottage cheese turns golden brown.

Remove the baked cake from the oven, slice it, and serve it warm. You can sprinkle a little sugar on top for decoration.
