Buckwheat Pancakes with Tuna and Mozzarella

90 g Flour, Whole wheat

95 g Flour, buckwheat

375 ml Milk, whole milk

2 piece Egg, fresh

6 g Salt, table

50 g Butter, unsalted

160 g Fish, tuna, in brine

2 piece Tomato, red

120 g Cheese, mozzarella

In a large bowl, mix buckwheat flour and whole wheat flour. Add eggs, melted butter, salt, and half of the milk. Use a hand whisk or an electric mixer to combine everything well until you get a smooth batter without lumps. Pour in the remaining milk and mix everything again thoroughly. If the batter is too thin, add a bit more flour. Let the prepared batter rest for 10 minutes.

While the batter is resting, prepare the filling for the pancakes. Wash the tomatoes under running water and dry them with paper towels. Cut them into slices and remove and discard the seeds. Chop the remaining parts into pieces. Cut the mozzarella into smaller pieces. Drain the tuna from the can well and transfer it to a bowl, where you break it into smaller pieces with a fork. Add the mozzarella and tomato pieces and mix everything well. Season with salt to taste.

Heat a large pancake pan well and lightly grease it with oil. Pour one ladle of batter into the pan. By tilting the pan, spread the batter evenly to create a thin layer. Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it’s cooked. Then flip the pancake and cook it on the other side. As soon as you flip the pancake, spoon the prepared filling onto one half. Once the pancake is cooked on the other side, use the spatula to fold the empty half over the filling. Transfer the pancake to a plate and serve. Repeat the process until all the ingredients are used.
