Buckwheat Porridge with Chanterelles
Buckwheat porridge with mushrooms is one of the traditional dishes from the Gorenjska region. The abundance of forests and meadows in the area offers a variety of delicious mushrooms. This time, prepare chanterelles in combination with buckwheat porridge and enjoy the exceptional flavor.

Ingredients

2 spoons Oil, vegetable oil, canola

2 piece Onion, raw

500 g Buckwheat flakes

50 dag Mushrooms, oyster

8 dag Butter, unsalted

2 pinch Salt, table

1 pinch Spices, pepper, black

4 spoon Sour cream

Before cooking, thoroughly rinse the porridge. Rinse it under running water until the water runs clear. Then drain the porridge well. Peel the onion and chop it finely.

Place a pot on the stove, heat the oil, and sauté half of the onion while stirring until it becomes translucent. Then add the porridge to the pot and evenly roast it for about five minutes. Pour a liter of water over the porridge and season with salt to taste.

Bring the porridge to a boil and cook it while slowly stirring until the water evaporates (approximately 15 to 20 minutes). Meanwhile, thoroughly clean the chanterelles and cut them into smaller pieces. Place a larger pan on the stove and melt the butter in it. Sauté the remaining onion and the chopped chanterelles in the fat. Roast while stirring for about 10 minutes.

Drain the cooked porridge and transfer it to the pan with the mushrooms. Season with salt to taste, add pepper, and enrich with sour cream. Mix everything well, serve on plates, and enjoy.
