Buckwheat Porridge with Chicken and Mushrooms
A delicious dish made from buckwheat porridge, chicken fillet, and fresh mushrooms. Since it is cooked in less than an hour, this dish is also suitable for a quick weekday lunch, and it pairs well with a large bowl of salad.

Ingredients

500 g Meat, chicken, breasts

1 piece Carrot, fresh

300 g Mushrooms, mushrooms, fresh

250 g Buckwheat flakes

120 ml Alcohol, Wine, White

Steps

Clean the mushrooms with a damp cloth (you can also quickly rinse them under running water). Use a sharp knife to trim the ends of the stems, then slice them.

Peel the garlic and onion, and chop them separately. Clean the carrot, wash it, and cut it into small pieces. Cut the chicken fillet into centimeter-sized pieces and season them with pepper and salt.

Place a pot on the stove and pour in half of the oil. Add the chicken pieces to the heated oil and quickly sauté them. Remove the sautéed chicken from the pot and keep it covered on a warm plate.

Pour the remaining oil into the pot. Add the onion and carrot, and sauté them while stirring until the onion becomes translucent. Add the chopped garlic, and as soon as it becomes fragrant, add the mushrooms to the pot. Sauté everything together for about 3 more minutes, then add the buckwheat porridge.

Pour wine over the ingredients in the pot. Once the wine boils, add 1/2 cup of hot water or broth to the porridge. Cook over medium heat and stir the porridge several times. When all the liquid has boiled away, add another 1/2 cup of hot liquid to the porridge.

When the porridge is almost fully cooked, return the sautéed chicken to the pot. Season with salt and pepper to taste, and add thyme. Cook for a little longer until the porridge is completely softened.

Serve the prepared dish on plates. Optionally, sprinkle some chopped parsley on top.
