Steps

Prepare the vegetable salad: Wash the tomatoes and peppers, dice them, and wash and chop the parsley. Peel the onion and roughly chop it. Toss all the vegetables into a bowl, season with salt, and mix with your hands. Squeeze the lemon and pour the juice over the vegetables. Cover the bowl and place it in the refrigerator.

Peel the spicy sausages and crumble the meat with your fingers. Pour two tablespoons of oil into a pan and fry the sausage pieces over moderate heat. While frying, peel the onion and garlic, chop them, and add them to the pan. Mix everything together and fry until the onion softens and dissolves.

Meanwhile, wash the pepper, remove the seeds, and dice it. Add it to the meat and continue frying for another 5 minutes, stirring occasionally. Remove the pan from the heat and place a new pan on the stove. Pour a little oil into it and crack the eggs. Scramble the eggs well with a spatula, season with salt and pepper, and wait until they set slightly. Transfer the scrambled eggs to a plate. Wash the pan, heat it up, and toast the tortillas on both sides until they puff up.

Place the meat mixture in the center of each tortilla, covering it with the scrambled eggs. Leave about 2 cm of the left edge empty. Fold the tortilla by first folding the left edge over the filling, then folding the top and bottom parts of the tortilla. Place a spoonful of the vegetable salad on the tortilla and serve.
