Butter Cookies with Dandelion
When you go for a walk in nature, alone or with your youngest helpers, pick a bunch of fragrant dandelion flowers. You can use them to prepare these special spring cookies that will melt in your mouth.

230 g Butter, unsalted

100 g Sugar, white

pieces Thyme, raw

300 g Wheat flour, white, multi-purpose

1 pinch Salt, table

Bring the butter to room temperature, then beat it together with sugar for 3 minutes using an electric mixer to create a light and fluffy butter mixture.

Use a spatula to mix in the yellow flower petals that have been plucked from the dandelion flowers. You can use any amount you like.

Add the flour and salt, then quickly knead the dough. Flatten it, wrap it in food wrap, and refrigerate for half an hour.

Preheat the oven to 160 degrees Celsius. Line a low baking tray with parchment paper.

Roll out the dough between two sheets of parchment paper to a thickness of half a centimeter. Use any cookie cutter to cut out the cookies and place them on the baking tray. Leave a few centimeters of space between them as they will spread slightly during baking.

Bake the cookies in the preheated oven for 20 minutes. Let them cool before serving.
