Butterfly Pasta with Pesto, Potatoes, and Green Beans

100 g Cheese, Parmesan, hard

Steps

Place a pot with a larger amount of water on the stove. Peel the potatoes, clean them, wash them, and cut them into smaller cubes. Clean the green beans (trim the ends and remove any strings), wash them, and cut them into shorter pieces. Prepare the pesto. Rinse the basil leaves under running water and dry them with paper towels. Peel the garlic and grate the Parmesan. Grind the garlic, basil leaves, and salt in a mortar into a smooth paste, then mix in a little grated Parmesan and olive oil. Grind the pesto once more until smooth.

When the water boils, add salt. Add the potatoes to the boiling water. Cook them for about 5 minutes. Then add the pasta and green beans to the pot. Stir everything well with a spoon and cook until the pasta and green beans are done.

Drain the cooked pasta and vegetables and mix them with the prepared pesto. Serve the prepared pasta on plates and sprinkle with pine nuts and the remaining grated Parmesan. Serve the dish.

Advice
When cooking pasta, follow the rule of using 1 liter of water for every 100 grams of pasta. For every liter of water, use 10 to 12 grams of salt. Pesto can also be prepared in a food processor or electric blender. Instead of butterfly pasta, you can use other types of pasta (e.g., spaghetti, trenette, linguine, etc.).
