Butterfly Pasta with Tomato Sauce, Ricotta, Capers, Tuna, and Fresh Mint
Tomato sauce with tuna is undoubtedly one of the most popular sauces for preparing pasta. It is usually enriched with the addition of basil, oregano, or rosemary, but it is also excellent with the addition of fresh mint. Ingredients

400 g Pasta, Macaroni

20 g Oil, olive

50 g Onion, raw

1 handful Carp, soaked

120 g Fish, tuna, in brine

400 g Tomato sauce, without salt

Steps

Place a pot with a larger amount of lightly salted water on the stove to cook the pasta (see tips).

Peel and finely chop the onion. Rinse and finely chop the capers. Heat olive oil in a non-stick pan and sauté the onion. Add the drained tuna from the can, capers, and tomato sauce with ricotta. Mix the ingredients in the pan well, bring to a boil, and remove from heat.

Add the butterfly pasta to the boiling water and cook for the time indicated on the package.

Once the pasta is cooked al dente, drain it, saving a little of the cooking water to thin the sauce if needed.

Transfer the pasta to the pan with the sauce, mix well, and tear fresh mint leaves on top.

The ideal ratio for cooking pasta is: 1 liter of water, 100 grams of pasta, and 7 grams of salt. This amount of water ensures excellent cooking homogeneity and prevents the pasta from sticking together during boiling. Italians swear by pasta "al dente," which means it is still firm when bitten. The easiest way to check if the pasta is cooked correctly is to taste it or break it. Properly cooked pasta will have a slightly darker dot in the center. If the dot is still white, the pasta is not yet cooked enough.
