Mix the milk and sweet cream together. In a separate bowl, whisk the egg yolks and smoothly combine them with the starch.

Place a thick-bottomed saucepan on the stove and add brown sugar, water, and salt. Mix the ingredients well, then cook the mixture without stirring for 5-6 minutes until it turns a dark brown color and develops a characteristic caramel aroma. If using a thermometer, the caramel is ready when it reaches 116 degrees Celsius.

Slowly pour the cream and milk mixture into the saucepan. Be careful not to burn yourself. Cook while stirring until the mixture thickens.

Pour the caramel into the egg yolks. Be careful not to curdle the eggs, so it’s crucial to pour the caramel very slowly in a thin stream while continuously whisking the yolks.

Return the egg yolk-caramel mixture to the saucepan. Cook the mixture over low heat while constantly stirring for another 1-2 minutes until it thickens and resembles pudding. Remove the saucepan from the heat and first mix in the butter, then the vanilla paste, and finally the rum or bourbon.

Wait 5 minutes for the pudding to cool slightly, then pour it into clean glasses or containers. Cover the pudding with plastic wrap to prevent a skin from forming on the surface. Once it cools to room temperature, refrigerate the glasses for 2-4 hours to allow the pudding to set.

Garnish the chilled pudding with whipped cream and sprinkle or crumble caramel candies on top. Serve the prepared dessert immediately.
