Cabbage Noodles
A simple homemade dish that children also enjoy eating. The noodles can be bought or made at home from rolled dough. Cabbage noodles can be a standalone dish, but they also make an excellent side dish for roasted meat and schnitzels.

Ingredients
Noodles

300 g Flour, Wheat, bread flour

1 pinch Salt, table

3 pieces Egg, fresh

1 spoon Oil, vegetable oil, canola

1 piece Onion, raw

50 g Meat, pork, smoked bacon

0.5 piece Cabbage, fresh

1.5 spoons Tomato, concentrate

Steps

On a clean work surface, sift the flour and add salt. Make a well in the center and pour in the beaten eggs. Mix the ingredients with your fingers or a fork until they come together into a rough dough, then knead it well until it becomes elastic and smooth. Wrap the dough in plastic wrap and let it rest in the refrigerator for about half an hour.

Roll out the dough thinly, dust it well with flour, and let it rest for about 10 minutes to dry slightly. Then cut it into 1 cm wide noodles. Dust them well with flour to prevent sticking and leave them on the counter while you prepare the cabbage.

Clean the cabbage, wash it, and cut it into quarters, removing the tough core. Slice the leaves into 1 cm strips. Peel and finely chop the onion, and cut the bacon into small pieces.

Heat the fat in a pan and first fry the onion and bacon. When the onion becomes translucent, add the chopped cabbage and fry it with the other ingredients for 1 to 2 minutes, stirring constantly. Add tomato paste and season the cabbage with salt, cumin, and paprika. Pour in a little water (you can also use broth) and simmer the cabbage covered until it softens. Stir it occasionally and add more water if needed - just enough to keep the ingredients simmering without burning.

Shortly before the cabbage is done, bring a large pot of salted water to a boil. Add the noodles to the boiling water and cook them for about 3 minutes (since it's fresh dough, it cooks very quickly).

Drain the cooked noodles and mix them with the stewed cabbage. Taste the dish and add more salt and/or pepper if needed.

Serve the prepared dish warm. Optionally, sprinkle some freshly chopped parsley on top.

Advice
If using store-bought noodles instead of homemade, follow the manufacturers cooking instructions. Instead of noodles, you can also use bow-tie pasta or snail-shaped pasta. If you want the cabbage to be even sweeter, add half a tablespoon of sugar after frying the bacon and onion. You can also add 0.5 dl of white or red wine to the stewed cabbage or a tablespoon of vinegar.
