Calzone with Ricotta and Ham
Calzone are essentially pockets made from pizza dough and filled with any desired fillings. Its definitely worth trying them with a delicious filling of ham, ricotta, and cheese!

Ingredients
Dough

30 g Yeast, dry

400 g Wheat flour, white, multi-purpose

0.5 teaspoons Salt, table

1 dl Oil, olive

pieces Water

200 g Cheese, cottage cheese

150 g Cheese, edamame

130 g Ham, pressed

30 g Cheese, Parmesan, grated

2 piece Egg, fresh

pieces Oil, vegetable oil, canola

In a small bowl, mix half a cup of lukewarm water (temperature should be around 20 degrees Celsius) with yeast. In a large bowl, sift the flour and make a well in the center. Pour the yeast and water mixture into the well. Sprinkle salt around the well on the flour.

Start kneading the dough from the center outward using your fingers or a fork. Add a bit more lukewarm water. Once about half of the flour is incorporated into the dough, slowly pour in the oil in a thin stream. Knead until you get a smooth and firm dough that doesn't stick to your hands. Shape the kneaded dough into a loaf and place it in a greased bowl. Make a cross on top and let the dough rise in a covered bowl in a warm place for about an hour or until it doubles in size.

While the dough is rising, prepare the filling. Mash the ricotta well with a fork and mix it with grated cheese, ham pieces, and grated Parmesan. Lightly season with salt and pepper and add an egg. Mix everything well.

Preheat the oven to 200 degrees Celsius. Quickly knead the risen dough on a floured surface and roll it out. Cut the dough into circles with a diameter of 15 cm. Drizzle the circles with a bit of oil and spoon the filling onto the center.

In a small bowl, beat an egg and use it to brush the edges of the dough. Fold the dough over to form a half-moon shape. Pinch the edges together firmly with your fingers. Brush the pockets with oil and place them on a baking sheet that has been greased or lined with baking paper.

Bake the calzone in the preheated oven for about 20 minutes. Serve with various sauces.

Advice
You can cut the dough into circles of any size - smaller if youre making snacks and larger if youre serving calzone as a main dish. Feel free to add any desired herbs to the filling, such as oregano, basil, or parsley.
