Candied Orange Rings

Ingredients

1 kg Sugar, white

500 g Orange, fresh

Wash the oranges well with warm water and dry them. Slice them into 1 cm thick rings. Tie a string to three ends of a kitchen rack, which will allow you to easily lift the rack from the sugar syrup. Arrange the orange rings on the kitchen rack. Cut a circle out of parchment paper that will nicely cover the fruit and place it over them.

Place a taller pot on the stove, which is slightly wider than the rack on which you have arranged the orange rings. Add sugar and water to the pot and heat it to a moderate temperature. Stir a few times while heating. Cook until the sugar is completely dissolved, then bring the mixture to a boil.

Lower the temperature slightly and submerge the rack with the fruit into the syrup. Increase the temperature again so that the mixture starts to simmer gently. Cook the fruit for 15 minutes. Remove the pot from the heat and let it cool at room temperature for 24 hours.

After the preparation has cooled for 1 day, lift the rack out of the syrup using the kitchen string tied to the rack and place it on a suitably large bowl to drain. Let it drain for about 1 hour. Meanwhile, prepare parchment paper. Transfer the well-drained fruit onto the parchment paper and let it dry thoroughly for 5 hours.

The candied fruit can be used immediately or stored in an airtight container, where it can be kept for up to 6 months.

Advice
It is best to use organic oranges, whose peel is not treated with pesticides. If organic oranges are not available, submerge the oranges in boiling water for a few minutes and wipe them thoroughly to remove the wax, which contains toxins. Instead of oranges, you can candy any other citrus fruits.
