Steps

Mix flour, eggs, water, and a pinch of salt to form a smooth and pliable dough. Shape the dough into a ball, brush it with a few drops of oil, and let it rest for one hour.

Place a large pot of lightly salted water on the stove, adding 1 teaspoon of olive oil. Roll out the dough thinly on a floured surface and cut into rectangles measuring 10 x 7 cm. When the water boils, cook the pasta rectangles for 2 minutes. Remove them with a slotted spoon and drain. Place the drained rectangles on a cloth that has been soaked in warm water and well wrung out.

Place a pot with a smaller amount of water on the stove. Clean and wash the spinach. Add it to the boiling water and cook just until it softens and reduces. Drain the spinach well.

Chop the drained spinach. In a large bowl, mix one-third of the spinach with ricotta, Parmesan, salt, nutmeg, and pepper. Mix the filling well. Season the remaining spinach with olive oil, pepper, and salt.

Preheat the oven to 180 degrees Celsius. Grease a deep baking dish well with butter. Spread the seasoned spinach evenly over the dish. Spoon the spinach filling onto the prepared pasta rectangles, roll them up, and place them side by side in the baking dish. Brush the tops with butter and sprinkle with grated Parmesan. Bake the dish in the preheated oven for about 30 minutes until the cannelloni are golden and crispy on top.
