Caprese Cake
A hard exterior and a juicy interior … yes, this is the famous Italian Caprese cake, which does not contain a single gram of flour. The original recipe comes from the Italian island of Capri, and its worldwide popularity is due to its simple preparation and divine taste.

Preheat the oven to 180 degrees Celsius. Grease a round baking pan with a removable rim (30 cm in diameter) with butter and dust with cocoa powder (remove any excess cocoa). Break or chop the chocolate into small pieces and melt them over a double boiler.

Beat the egg whites with an electric mixer until stiff peaks form. Cream the softened butter and sugar until fluffy. Gradually mix in the egg yolks, one at a time. Once all the yolks are added and a slightly creamy mixture is achieved, reduce the mixer speed and add the remaining ingredients: ground almonds and the cooled melted chocolate. Finally, gently and slowly fold in the beaten egg whites in two or three additions using a hand whisk.

Pour the batter into the prepared baking pan. Gently spread it with a spatula and smooth the top. Bake the cake in the preheated oven for 40 to 45 minutes.

Let the baked cake cool completely, and before serving, dust it with powdered sugar or cocoa.

Advice
You can also mix in one or two tablespoons of almond or another liqueur into the batter. Instead of ground almonds, use coarsely chopped blanched almonds, which are lightly toasted in the oven beforehand.
