Ingredients

Steps

Sift the flour onto a clean work surface and make a well in the center. Crack the eggs into the well. Add a little water and a pinch of salt, then knead all the ingredients together to form a smooth pasta dough. Wrap the dough in a cloth and let it rest for about an hour.

Peel and finely chop the garlic. Thoroughly wash and shake the parsley to dry it slightly. Remove the leaves and chop them finely. Place a larger pan on the stove and heat it up, then add the oil. Quickly sear the fish fillets in the hot oil, seasoning them with pepper and salt to taste. Add the garlic to the pan and wait until it becomes fragrant, then pour in the wine and continue cooking until the wine evaporates. Once the wine has evaporated, remove the pan from the heat.

Crack the eggs into a bowl and beat them with a fork. Transfer the fish fillets to a food processor and blend them together with the beaten eggs, Parmesan, and parsley. Add salt and pepper to taste if desired.

Roll out the dough thinly on a floured surface and cut it into 4 by 8 cm rectangles. Place a spoonful of filling on each rectangle, then fold the rectangles over. Press the edges together firmly and use a fork to create a decorative edge. Lightly dust the prepared ravioli with flour.

Place a large pot of salted water on the stove and wait for it to boil. Add the prepared ravioli to the boiling water. Once they float to the surface, remove them with a slotted spoon. Then, place a pan on the stove and melt about 50 g of butter. Wash, shake, and roughly chop the basil. Arrange the ravioli on plates, drizzle with the melted butter, and sprinkle with Parmesan and basil. Serve the prepared dish to your guests.
