Caramel Pudding

Steps

Wash the lemon and orange and grate their zest with sugar cubes. Whisk the whole eggs with 80 g of sugar and the sugar cubes until frothy using a whisk or electric mixer. Whip the cream until stiff and slowly fold it into the egg mixture.

In a small pot, continuously stir 100 g of sugar until it turns into a light caramel. Place a pot of water on the stove.

Pour the caramel into the pudding mold (or pudding basin), which can be closed. Pour the egg and cream mixture into the mold. The mixture should be three fingers below the rim, as the pudding will rise during cooking.

Cover the mold and place it in the pot of boiling water. The pot used for steaming should be taller than the mold, and the water should reach just over halfway up the mold. Cook the pudding over moderate heat for one hour and fifteen minutes. The water should simmer gently the entire time. Remove the mold from the pot, uncover it, and let it stand for five minutes. Then carefully invert the pudding onto a plate and serve.

Advice
The caramel must remain light, as dark caramel can become bitter. If you dont have a pudding mold, you can pour the pudding mixture into regular pots, covering them with aluminum foil. Steam should not reach the pudding mixture. The mixture should always be three fingers below the rim of the pot, as the pudding will rise during cooking. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
