200 g Sugar, white

2 spoons Water

20 g Butter, unsalted

250 ml Sweet cream

Steps

Place a small pot with a thick bottom on the stove and add sugar to it. Pour in water and slowly heat the mixture over medium heat. Once all the sugar has dissolved, slightly increase the temperature and continue cooking the sugar syrup until it turns a beautiful amber color.

Remove the pot from the heat and wait for the bubbles to disappear. Stir in the butter into the caramel. Return the pot to the stove and carefully pour in the hot cream. Add salt and continue cooking while stirring constantly until the sauce thickens. It is ready when a visible trail remains at the bottom of the pot when stirred.

Pour the prepared sauce into a jar or bowl. You can use it immediately or let it cool and store it in a sealed container in the refrigerator. If you want the sauce to be liquid again, warm it to room temperature before use.
