Caramelized Plums with Wine Sabayon

300 g Dried plums

120 g Sugar, white

1 piece Spices, cinnamon, ground

1 piece Spices, caraway, seeds

pieces Orange, shell

1 piece Vanilla, extract, natural

2 piece Egg, egg yolk, fresh

1.5 dl Alcohol, Wine, White
Steps

Remove the pits from the plums and roll them in sugar.

Slowly roast the plums in a pan until the sugar on them caramelizes. While roasting, gently stir them with a wooden spoon. Once caramelized, pour a little orange juice over the plums. Add a cinnamon stick, finely grated orange zest, and star anise. Split the vanilla pod in half and scrape the seeds from both halves with the tip of a knife, adding them along with the pod to the pan with the plums. Once all the spices are added, remove the pan from the heat and cover it.

Next, prepare a double boiler. In a heatproof bowl, vigorously whisk the eggs, egg yolks, and the remaining sugar. Place the bowl over the steam and add the orange juice and wine. Whisk the contents of the bowl until the custard thickens and rises nicely. Be careful not to let the sabayon boil!

Serve the plums on plates and top them with the warm wine sabayon.
