Cardinal Slices
If anything has impressed me lately, its definitely these wonderful slices that can truly be presented to a cardinal. Delicate, fluffy, enriched with strawberry jam, the pastry looks like it took all day to make, but in reality, its done in a good half hour. If we put in a little extra effort and decorate it nicely, the victory is complete.

Ingredients
Cream

250 g Cheese, creamy

1 dl Sweet cream

2 spoons Powdered sugar
Egg white snow

6 pieces Egg, egg yolk, fresh

100 g Sugar, white

1 bag Sugar, white

1 spoon Lemon zest, fresh

100 g Flour, Wheat, bread flour

0.5 bags Baking powder
Steps

Place egg whites, regular sugar, and vanilla sugar in a bowl of a mixer and whisk slightly. Add lemon juice and a pinch of salt and mix until stiff peaks form. The egg whites can also be whisked with an electric mixer. Transfer the meringue to a piping bag.

Whisk the egg yolks with regular and vanilla sugar until frothy. Add lemon zest and sifted flour with baking powder. Mix into a smooth batter. Transfer the batter to a piping bag.

Line a baking tray with parchment paper. First, pipe the meringue onto it, making wide stripes, leaving about 2 centimeters of empty space between them.

Fill the empty spaces with the egg yolk batter, also piped from a piping bag. Place everything in the oven preheated to 160 degrees Celsius for about 35 minutes.

While the pastry is baking, make the cream. Place mascarpone, sweet cream, and powdered sugar in a mixer and mix until a nice cream forms. The cream can also be prepared with an electric mixer.

Once baked, cut the pastry in half lengthwise, flip it over, and remove the parchment paper from the bottom side. Let it cool.

Spread strawberry jam on the cooled sponge. Then spread the mascarpone cream over the jam and cover with the other half of the sponge.

Decorate the pastry on top with jam, powdered sugar, and fresh strawberries.
