Ingredients

1 piece Egg, fresh

180 ml Juice, orange

60 g Butter, unsalted

100 g Sugar, white

125 g Wheat flour, white, multi-purpose

Steps

Preheat the oven to 200 degrees Celsius. Grease the muffin tin with butter or place paper liners in the molds.

Place a small pot with butter on the stove and melt it slowly over low heat. Remove the pot from the heat and let the butter cool slightly. Clean the carrots, wash them, and peel or scrape them if necessary. Grate them finely.

In a bowl, lightly beat the egg with a hand whisk. Add the orange juice, melted butter, sugar, and mix everything well.

In another bowl, mix the flour, ground almonds, baking powder, and baking soda. Add the dry ingredients mixture to the bowl with the egg mixture. Mix just enough to moisten all the ingredients, then fold in the grated carrots.

Fill the muffin molds with the prepared batter up to 2/3 of their height. Bake the muffins in the preheated oven on the middle rack for 15 to 20 minutes, or until they turn golden brown on top. To check if the muffins are done, insert a toothpick into one – if it comes out clean, the muffin is baked.

Remove the baked muffins from the oven and let them rest for about 5 minutes. Then take them out of the tin, place them on a rack, and let them cool completely.

Dust the cooled muffins with powdered sugar, decorate with marzipan carrots, arrange them on a large plate or platter, and serve.

Advice
Instead of orange juice, you can use sparkling water or yogurt. You can also add a pinch of salt and a little cinnamon to the dry ingredients mixture if desired.
