Wash the carrots, peel them, grate them, and finely shred them. Place a pan on the stove and quickly toast the walnuts dry. Chop the toasted walnuts coarsely.

In a large bowl, mix the flour, baking powder, cinnamon, nutmeg, and ginger. In another bowl, beat the eggs with a hand whisk, then add the sugar, milk, oil, and vanilla. Add the liquid mixture to the dry ingredients and gently mix with a whisk. Fold in the carrots, grated orange zest, and walnuts.

Place a pan on the stove and heat it over medium heat. Add a piece of butter to the pan and wait for it to melt. Pour 1/4 cup of the batter into the pan to form a small pancake. You can cook multiple pancakes at the same time, depending on the size of the pan. Cook the pancakes for about 3 minutes. When bubbles start to form on the surface, flip them and cook for another 2 minutes. Repeat the process until all the pancakes are cooked.

Arrange the carrot pancakes on plates and serve with homemade yogurt and strawberry jam.
