Clean and rinse the carrots under running water (peel them if necessary). Grate the washed carrots or cut them into julienne strips. Rinse the parsley and coriander, shake them dry, and finely chop them.

In a small bowl, prepare the salad dressing by mixing orange juice, lemon juice, olive oil, and salt. Make sure to mix the ingredients long enough for the salt to dissolve completely.
