Ingredients

1 piece Onion, raw

4 pieces Carrot, fresh

10 g Ginger, fresh

800 ml Soup base, chicken, cube

4 twig Parsley, fresh

2 pinch Salt, table

1 pinch Spices, pepper, black

2 slices Bread, wheat
Steps

Peel and finely chop the onion and garlic. Peel the carrots and cut them into cubes, clean the greens, wash them, and cut them into smaller pieces. Peel the ginger root and grate it finely.

Place a pot on the stove and heat it up, then add oil. Quickly sauté the onion and garlic while stirring until fragrant. Add the carrots, greens, and ginger, and sauté everything together for about 5 minutes. Stir frequently.

Pour the broth over the vegetables and cook at low heat for about 30 minutes. While the soup is cooking, wash and dry the parsley and set it aside for garnish. Cut slices of stale bread into smaller cubes. Heat a pan on the stove, add oil, and quickly toast the bread cubes.

Once the soup is ready, remove the pot from the stove and blend the soup smoothly with an immersion blender. Season the soup with pepper and salt to taste. Serve the prepared soup in deep bowls, garnish with parsley and toasted bread cubes, and enjoy.
