Carrots with Roasted Nuts

600 g Carrot, fresh

80 g Walnuts

2 spoons Juice, lemon

2 spoons Oil, olive

1 bouquet Parsley, fresh

Wash the parsley, shake it dry, and chop it. Clean the carrots, peel them, and wash them. Cut them in half lengthwise, then diagonally slice them into pieces a few centimeters long. Bring salted water to a boil in a pot and add the carrots. Cook the carrots for 5 to 7 minutes. Drain the cooked carrots and transfer them to a bowl.

Heat oil in a pan and roast the nuts while stirring. Season with salt, add the parsley, mix well, and quickly sauté just until the parsley wilts slightly. Then mix in the carrots and lemon juice, stir well, divide onto plates, and serve.
