Casserole with Sauerkraut, Bacon, and Potatoes
A delicious layered dish made with slices of potatoes and sauerkraut mixed with fried bacon. Everything is then topped with a mixture of milk and sour cream and baked golden brown in the oven. Tasty and comforting!

150 g Meat, pork, smoked bacon

1 piece Onion, raw

500 g Sauerkraut

1 kg Potatoes, white

2 dl Sour cream

1 dl Milk, whole milk

1 piece Egg, fresh

Taste the sauerkraut, and if it seems too sour, quickly rinse it under running water and drain. Peel and finely chop the onion, and cut the bacon into small pieces.

Fry the chopped bacon until crispy. Leave about 1.5 tablespoons of fat in the pan and pour out the rest. Add the chopped onion and sauté until translucent. Then add the sauerkraut and season with paprika, pepper, and salt. Mix well, add a little water, and cover to simmer until the sauerkraut is half-cooked.

Peel, wash, and slice the potatoes into 1 cm thick rounds. Place them in a large pot, cover with cold water, and bring to a boil. Once boiling, add salt and simmer gently for 10 minutes. Then remove the pot from the heat and drain the potatoes well.

Preheat the oven to 180°C (350°F). Grease a casserole dish with oil, then layer half of the potatoes in the dish. Spread the sauerkraut and bacon mixture over the potatoes, then top with the remaining potatoes. Arrange the potato slices so they slightly overlap.

In a bowl, mix the sour cream, egg, and milk. Lightly season the mixture with salt and pepper, then pour it over the layered dish. Bake in the preheated oven for 45-50 minutes. When the top is golden brown, the dish is ready. Before serving, sprinkle with some chopped parsley.
