Clean the cauliflower, wash it, and cut it into smaller florets. Add the chopped cauliflower to a food processor and pulse until it resembles fine couscous.

Transfer the cauliflower couscous to a large bowl and drizzle with olive oil. Add chopped cherry tomatoes, sun-dried tomatoes, olives, and cucumber. Finely chop the fresh herbs and add them to the bowl along with the pine nuts. Season with salt and pepper to taste. Mix everything well with clean hands.

Next, prepare the tahini dressing. In a blender, combine tahini, olive oil, lemon juice, honey, garlic, salt, and pepper until smooth. If you prefer a thinner dressing, add a little water. Taste the prepared dressing and adjust the seasoning with more salt or pepper if needed.

Clean the radicchio, wash it, and separate it into individual leaves to create small boats. Fill the radicchio boats with the cauliflower couscous and drizzle with the tahini dressing. Garnish the stuffed radicchio boats with black sesame seeds and watercress.
