Ingredients

1 piece Cauliflower, fresh

1 piece Tomato, red

1 piece Onion, raw

1 teaspoon Spices, mustard seeds, ground

1.5 teaspoons Spices, curry powder

Steps

Clean the cauliflower, remove the outer leaves and the woody part of the stem, then break it into smaller florets. Thoroughly wash the tomato and parsley. Remove the stem from the tomato and cut it into smaller pieces, roughly chop the parsley, and set it aside for later. Peel the onion and garlic, and finely chop each separately. Peel the ginger and slice it thinly.

Place a larger pan (wok) on the stove and heat it well, then add the oil. Add the onion to the pan and quickly sauté it until translucent. Add the ginger, garlic, salt, mustard seeds, and curry. Fry everything together for a few minutes over moderate heat. Stir the ingredients frequently with a wooden spoon while frying.

Then add the cauliflower and tomato to the pan. Fry on high heat for about 4 minutes, then reduce the temperature and pour in about half a cup of lukewarm water. Cover and cook the curry for 15 minutes, until the cauliflower is cooked but still crisp.

Serve the prepared dish on plates, sprinkle with the roughly chopped parsley, and enjoy.
