Cauliflower Fritters
Pieces of cauliflower are dipped in a delicate batter and fried to a golden brown in hot oil. These prepared vegetable fritters can be served as a side dish or as a snack at a party with various sauces. We recommend serving them with romesco sauce, chili sauce, or curry sauce, but the choice of how to serve them is entirely up to you.

Ingredients

1 piece Cauliflower, fresh

100 g Wheat flour, white, multi-purpose

2 pinch Salt, table

170 ml Water

2 spoons Oil, vegetable oil, canola

Steps

Clean the cauliflower, wash it, and divide it into florets. Leave small florets whole, and cut larger ones in half if desired.

Bring a large amount of water to a boil in a pot. Add the cauliflower pieces to the boiling water and cook for 2 minutes. Drain the blanched pieces in a colander, rinse under cold running water, and drain well. Dry the drained pieces with paper towels.

Sift the flour into a bowl and mix it with salt. In another bowl, whisk the egg yolks with a hand whisk and mix them with cold water. Pour the mixture along with oil into the bowl with flour and mix the ingredients well to form a smooth batter without lumps. Beat the egg whites into stiff peaks and gently fold them into the batter in two or three additions.

Heat the frying oil well in a pot. The oil is hot enough when small bubbles appear around the edge of a spoon or ladle dipped into the hot oil. Add a few pieces of cauliflower to the batter and gently push them into the batter with a spoon or ladle. Use a slotted spoon (or fork) to lift them from the bowl and place them in the hot oil. Once they turn golden brown, remove them from the oil with a slotted spoon and place them on a plate lined with paper towels. Repeat the process until all the cauliflower pieces are fried.
