Steps

It’s best to prepare the sauce in advance by mixing all the ingredients in a bowl and then placing it in the refrigerator.

Cut the cauliflower into the smallest florets possible and boil them in salted water for 8 minutes to soften. Drain and place them on prepared paper towels to absorb the water.

Place two-thirds of the cauliflower in a bowl and mash it with a potato masher. Add the beaten eggs, flour, baking powder, chopped parsley, cumin, and optionally Parmesan. Season with salt and pepper, mix well, and finally fold in the remaining cauliflower.

Heat olive oil in a pan, then scoop large spoonfuls of the mixture into the pan and gently press them down with the back of the spoon. Leave some space between the patties to make flipping easier.

Fry the patties over medium-high heat for two minutes on each side until golden brown. Serve them hot, optionally sprinkled with a bit more Parmesan. Serve with a sour cream sauce on the side.
