Cauliflower Patties with Ham and Cheese

Ingredients
Cauliflower meatballs

1 piece Cauliflower, fresh

2 piece Onion, young

2 spoons Cheese, Parmesan, grated

3 spoons Breadcrumbs, dried

100 g Ham, pressed

Steps

Clean the cauliflower, wash it, and dry it. Divide it into larger florets, which we cook in salted boiling water for about 10 minutes or until they are half-cooked. Drain the cooked florets and let them cool.

Clean the spring onion, wash it, and cut it into smaller pieces. Finely chop the cooled cauliflower florets and add them to a bowl along with the onion. Mix in the grated cheese, breadcrumbs, and egg yolks. Beat the egg whites with a pinch of salt into stiff peaks, which we gently fold into the cauliflower mixture in two or three batches. Finally, season the mixture with pepper and salt to taste.

Place a pan on the stove and heat it well. Pour a thin layer of oil into the pan, wait for it to heat up, then use a spoon to place dollops of the prepared mixture into the pan. For each patty, you need about two tablespoons of the mixture. Flatten the dollops slightly with the back of the spoon to form round and slightly thicker patties. Fry them until golden brown on the bottom side, then carefully flip them with a spatula and fry the other side.

Place the fried patties on a plate lined with paper towels. Repeat the process until you run out of mixture.

Arrange the fried patties in a baking dish. Top them with slices of ham, tomato, and cheese, and bake in the oven preheated to 180 degrees Celsius for about 10 minutes, until the cheese melts.
