Cauliflower Pizza Margherita
We wont delve into the debate of whether this is a real pizza or not. Thats up to you. The fact is, this pizza is an excellent example of a dish that is not only healthy but also very tasty.

Ingredients

600 g Cauliflower, fresh

40 g Cheese, Parmesan, grated

50 g Nuts, almonds

1 piece Egg, fresh

400 g Tomato, pieces - can

1 spoon Oil, olive

150 g Cheese, mozzarella

Preheat the oven to 200 degrees Celsius. Line a low baking tray with parchment paper.

Add the cauliflower to a food processor (blender) and finely grind it (the pieces should be the size of coconut flour). Transfer the grated cauliflower to a bowl. Add Parmesan, almonds, a beaten egg, season with salt (and pepper if desired), and mix everything well with a spoon or spatula.

Spread the cauliflower mixture onto the parchment paper and shape it into a round and thin pizza base (about 30 cm in diameter and 0.5 cm thick). Bake the cauliflower base in the preheated oven for about 25 minutes, until the top is nicely golden brown and the base feels firm to the touch.

While the base is baking, make the tomato sauce. In a saucepan, add tomato puree and season it with herbs, salt, and a little olive oil. Cook the sauce over moderate heat, stirring occasionally, for 10 minutes.

Spread the tomato sauce over the baked base and arrange slices of mozzarella on top. Season the pizza and bake it in the preheated oven for another 10 minutes, until the cheese is nicely melted and the cauliflower base is crispy.

Carefully transfer the baked pizza to a large plate (board, tray). Cut it into pieces of any size and serve.

Advice
Instead of dried herbs, you can use fresh ones, and mozzarella can be replaced with another cheese if desired. The grated cauliflower can be heated in the microwave for 5 to 6 minutes before baking to soften it slightly (or you can steam it or boil it; in this case, you must drain the excess water).
