Cauliflower Pizza with Potatoes and Goat Cheese
Have you ever thought of making pizza dough from vegetables? This is one of the latest trends in healthy eating. Cauliflower "dough" tastes slightly different from traditional pizza dough, but once topped with ingredients, the difference is minimal.

Ingredients
Cauliflower dough

500 g Cauliflower, fresh

1 piece Egg, fresh

50 g Cheese, Parmesan, grated

75 g Cheese, mozzarella

2 pod Garlic, fresh

3 spoons Oil, olive

3 pieces Potatoes, white

0.25 teaspoons Spices, thyme, dried

100 g Cheese, goat, soft
Steps

Peel and finely chop the garlic. Carefully clean and wash the cauliflower head. Separate it into florets and coarsely grind them in a food processor (the pieces should be the size of coconut flakes). Microwave the ground cauliflower for 5 to 6 minutes (or steam or boil it; in this case, make sure to drain any excess water).

Preheat the oven to 200°C. Place the softened and cooled cauliflower in a large bowl and mix it with grated cheese, a whisked egg, salt, pepper, and chopped garlic. Mix well to form a firm and uniform dough.

Line a low baking tray with parchment paper and spread the cauliflower dough in a circular shape. Bake in the preheated oven for 10 minutes.

While the dough is baking, prepare the other ingredients. Peel, wash, and slice the potatoes very thinly. Boil the slices in salted water for 1 to 2 minutes. Drain the cooked slices well and place them in a bowl. Add two tablespoons of olive oil, thyme, salt, and pepper, and gently mix with your hands to evenly season the potato slices.

Top the baked cauliflower base with the potato slices and arrange pieces of goat cheese on top. Bake the pizza in the preheated oven for another 15 minutes, or until the potato slices turn golden brown.

Before serving, drizzle the baked pizza with a little olive oil, cut into desired-sized pieces, and serve.

Advice
