Cauliflower Puree

Ingredients

1 piece Cauliflower, fresh

250 ml Water

2.5 spoons Sour cream

1 spoon Butter, unsalted

2 pinch Salt, table

2 pinch Spices, pepper, white
Steps

Clean the cauliflower, wash it, and divide it into smaller florets, which you place in a pot. Add water and place the pot on the stove.

When the water boils, reduce the heat to medium and cook the cauliflower for about 10 minutes or until it softens.

Drain the cooked cauliflower well, reserving some of the cooking liquid. Return the cauliflower to the pot, add one or two tablespoons of the reserved liquid, and blend everything smoothly with an immersion blender. Finally, mix in the sour cream and butter. Season with pepper and salt to taste.

Advice
Instead of water, you can also use vegetable or meat stock. You can enrich the cauliflower puree by adding a pinch of ground nutmeg. Salt the cauliflower when it is cooked. If you salt the water in which it is cooked, it will discolor during cooking.
