Cauliflower Steaks with Gremolata
An excellent meatless dish with a resounding name and a very simple preparation. The most work youll have is just cutting and chopping, the rest will be a piece of cake.

Preheat the oven to 200 degrees Celsius. Wash the cauliflower and remove the green leaves, then cut off the excess part of the stem. Slice it into four thick, approximately 2-centimeter thick, slices or 'steaks'. Save the remaining cauliflower and use it in another recipe.

Line a baking tray with parchment paper, then place the cauliflower steaks on it. Brush each steak with a spoonful of olive oil and lightly season with pepper and salt. Place the tray in the preheated oven for 20 minutes. Flip the steaks halfway through baking to ensure they are evenly browned on both sides.

While the steaks are baking, prepare the gremolata. Rinse the parsley under running water, shake it dry or pat it dry, and finely chop it. Peel the garlic and also finely chop it.

In a small bowl, mix the chopped parsley, garlic, olive oil, grated lemon zest, and lemon juice. Season the sauce to taste with salt and ground pepper.

Once the cauliflower steaks are baked, remove them from the oven. Add a little gremolata to each steak, and serve the rest in a small bowl alongside the steaks. Mashed potatoes pair excellently with this dish, and you can add some cooked or roasted red beets for color and flavor.
