Cauliflower with Pancetta and Cheese from the Oven
This winter delicacy can be served as a standalone dish, and it also pairs excellently with a juicy piece of meat.

1 piece Cauliflower, fresh

100 g Meat, pork, smoked bacon

4 pieces Onion, young

2 spoons Butter, unsalted

3 pods Garlic, fresh

2 dl Sweet cream

150 g Cheese, Cheddar

3 spoons Sour cream

50 g Cheese, Parmesan, grated
Steps

Preheat the oven to 175 degrees Celsius. Remove the green leaves from the cauliflower and cut it into smaller florets. In a large pot, bring salted water to a boil and cook the cauliflower for three minutes, then drain it.

Crisp the pancetta slices in a dry pan. Once cooled, chop or crumble them into pieces. Clean the onions and slice them into rings.

Mince the garlic and sauté it in butter for a minute, then add the cooking cream. Grate the cheese and mix it into the cream. Once melted, remove from heat and stir in the sour cream. Season with salt and pepper.

Arrange the cauliflower in a baking dish, sprinkle with pancetta pieces and onion rings, and pour the cheese sauce over everything. Finally, sprinkle with grated Parmesan and bake in the oven for 30 minutes.
