Celeriac with Almonds

Wash the celeriac roots under running water. Trim the top and bottom ends. Save the greens. Cut the roots into quarters.

Place the celeriac quarters in a pot and add enough water to cover them completely. Lightly salt the water and place the pot on the stove. Once the water boils, reduce the heat and simmer the celeriac slowly for 10 minutes. Then drain the celeriac well.

Preheat the oven to 200 degrees Celsius. Squeeze the juice from half a lemon. Arrange the celeriac quarters in a deep baking dish that has been greased with butter. Drizzle the celeriac with lemon juice and top with pieces of the remaining butter. Finally, sprinkle with almond slices. Place the dish in the preheated oven and bake for about 10 minutes, until the almond slices are lightly browned.

Serve the celeriac directly from the baking dish or transfer it to a serving plate and serve as a side dish. Garnish with the saved greens.
