Ćevapi are well-known throughout the Balkan Peninsula. They can be made from beef alone, a mix of beef and veal, pork alone, or, as in Greece, lamb alone.

Mix the meat with the other ingredients to form a uniform mixture. Shape the mixture into 5 cm long and thumb-thick rolls, then grill them evenly on all sides.

The ćevapi should be browned and crispy on the outside, while still pink and juicy inside. Serve with chopped spring onions, ajvar, and white bread.
