Cheese and Chive Scones
These scones can be used to make excellent sandwiches and canapés. You can cut them in half and spread them with any desired spread… or enjoy them plain without any additions.

510 g Wheat flour, white, multi-purpose

65 g Butter, unsalted

360 g Cheese, edamame

0.25 bouquet Thyme, raw

Steps

Preheat the oven to 220 degrees Celsius. Line a large, shallow baking tray with parchment paper. Grate the cheese finely and chop the chives.

Sift the flour into a bowl and mix it with salt and baking powder. Add the butter, cut into pieces, and quickly rub it into the dry mixture with your fingertips, lifting the mixture to make it airy and crumbly. Add the cheese and chives, mix well, then pour in enough cold milk to bind the ingredients together into a soft, but not sticky dough. If the dough is too soft and sticky, add a little more flour.

Turn the dough onto a floured surface and quickly knead it. Then roll it out to a thickness of 2 to 2.5 cm. Using a cutter, cut out any shapes you like (triangles, squares, circles, flowers, or hearts) and place them on the prepared baking tray. Before baking, brush the dough with a mixture of milk and beaten egg. Bake in the preheated oven for about 10 minutes.

When the scones have risen and turned golden brown on top, remove the tray from the oven. Wait a few minutes for the scones to cool, then serve them.
