Steps

In a bowl with an electric mixer, mix the cottage cheese, eggs, milk, rum, lemon zest, sugar, and salt. Sift the flour and baking powder into the mixture and mix the ingredients well again to form a uniform dough. Let the dough rest for one hour before frying, if desired.

Heat oil in a larger pot to 180 ÂșC (if you don't have a thermometer, you can help yourself by dipping the handle of a wooden spoon into the oil. The oil is hot enough when bubbles start to form around the handle).

Take a small spoon and dip it into the heated oil for a few seconds. Use the spoon to scoop the dough and place it into the hot oil, which will easily slide off the oiled spoon. Fry the doughnuts gradually. When they turn golden brown on one side, flip them and fry the other side.

Remove the fried doughnuts with a slotted spoon and transfer them to a plate lined with kitchen towels. Let the excess oil drain. Repeat the process until all the dough is used.

Serve the warm doughnuts on a large plate or platter, sprinkle with powdered sugar, and serve.
