Soufflé: Add egg yolk, cornstarch, salt, pepper, nutmeg, thyme, and wine to the cheese. Mix and add butter, warmed to room temperature. Pour in sweet cream and mix everything thoroughly with a mixer. Gently fold in the beaten egg whites. Grease suitable molds (you can use coffee cups) with butter and sprinkle with breadcrumbs. Fill them with the cheese mixture. Place them in a baking dish and pour in enough water to reach three-quarters of the height of the molds. Bake for about 20 minutes at 170 °C. Once the soufflés are baked, remove them from the oven and let them cool slightly before serving with fondue.

Fondue: Sauté a clove of garlic in butter. Add coarsely grated full-fat cheese and melt it over low heat. Add cream and simmer slightly. At the very end, add dry white wine and finely chopped thyme.
