Cheese Tartlet, Caramel Sauce, Strawberry and Cucumber Salad
In the grand finale of the popular cooking competition Slovenia, Darko Klemen and Matej Zupančič competed for the prestigious title and a rich prize. Their final task was to prepare a top-notch three-course menu, showcasing all their knowledge, passion, and motivation. We present to you the recipe for Darkos dessert, which impressed the judges with its harmonious blend of seemingly incompatible ingredients.

200 g Wheat flour, white, multi-purpose

50 g Powdered sugar

100 g Butter, unsalted

1 piece Egg, fresh

200 g Cheese, cottage cheese

50 ml Sweet cream

3 pieces Gelatin powder, unsweetened

150 g Sweet potato, unpeeled, fresh

300 g Sugar, white

1 pod Vanilla, extract, natural

In a bowl, combine flour, egg, butter, sugar, salt, baking powder, and baking soda. Knead the mixture to form a uniform dough, then let it rest in the refrigerator.

In a small pot, caramelize the sugar. Add vanilla and pour in the cream to create a thick caramel sauce, enriching it at the very end with a pinch of sea salt.

Dice the cucumbers and strawberries. Add a teaspoon of powdered sugar and finely chopped mint.

Roll out the chilled dough to about 3 mm thickness and cut out circles. Place them in molds, prick with a fork, and bake in an oven preheated to 180 degrees Celsius for 10 minutes. Quickly cool the baked dough.

Soak the gelatin in cold water, squeeze it out, and mix it with the cottage cheese and cream. Pour the mixture onto the cooled dough. Store the molds in the refrigerator for 15 minutes to allow the tartlet to cool and set properly.
